Homemade Strawberry & Grapefruit Daiquiri Popsicle

For the last day of July and to celebrate this month’s exciting ‘Daiquiri Day’ (19th of July), the Hel’s Angels Team brings you a yummy Strawberry and Grapefruit Daiquiri Popsicle… to enjoy on those hot summer days!

Makes 8 x 150ml lollies



110ml fresh lime juice (around 4 big limes)

2 Grapefruit flesh, seeds discarded and roughly chopped

400g Strawberries roughly chopped as well.

¾ cup sugar

¾ cup water

150ml of your favourite Rum



On low to medium heat, add the sugar and water in a small sauce pan. Mix it until the sugar entirely dissolves, it only takes a few minutes. Let the simple syrup cool down to room temperature.


Place grapefruits, strawberries, lime juice and the simple syrup in a food processor or a blender until pureed. (about 1 or 2 minutes).


Add the Rum and blend again for a few seconds until smooth (go carefully when pouring the Rum as too much alcohol will prevent the popsicles from freezing).


Separate the mixture between 8 Popsicle moulds; alternatively you can use paper party cups as well! And freeze for 2 hours until mixture starts to solidify. Then place a wooden stick into the centre of each one and freeze for another 5 hours or overnight for a better result.


To serve, run the moulds under warm water until easy to release (or simply tear away the paper cups).
