Give Peas a chance

Spring is desperately trying to spring into our lives and to give it a helping hand we’ve created a light and refreshing cocktail to hail in the birdsong, cherry blossom and long awaited rays of vitamin D!

Trendy cocktail establishments nationwide have turned their minds greenwards, towards the latest flavour of the month – Juice-tails. Bright green and vitamin-packed, they’re the drink that ticks all the must have boxes with a twist – the newest craze and most delightful way to hit your five a day!

Enter the glorious PEA! Not only a good source of Protein, Vitamin A, Riboflavin, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Copper, but a really good source of Dietary Fibre, Vitamin C, Vitamin K, Thiamin and Manganese.

Anyway I digress – now for something for everyone – a pea gin fusion, recipe below.

Spring cocktail is in the air

2 Tablespoons of peas – scared in boiling water for 2mins if fresh and 4 if frozen
1 tablespoon of chopped cucumber
Juice of 1 lemon wedge
1/2 teaspoon of Sugar Syrup
35ml Gin
10ml Elderflower Cordial
Top with Tonic Water
Basil Leaf & 3 Peas

Add Peas, Cucumber & Lemon Juice to a long glass & muddle lightly to release flavour (careful not to turn your peas to a mush). Fill your glass to the tip top with cubed ice & pour in sugar syrup, Gin & Elderflower Cordial. Stir while topping with tonic. Garnish with 3 peas balanced on a basil leaf and serve.
